Description

Queso Chicken Tacos are a creamy, cheesy, and flavorful taco option made with tender chicken, mild taco seasoning, diced tomatoes, green chiles, and salsa con queso. Served on soft flour tortillas and topped with fresh garnishes, these tacos are perfect for a quick and satisfying meal.


Ingredients

  • 2-3 pounds boneless skinless chicken breasts (about 4 medium-sized breasts)
  • 1 ounce package mild taco seasoning (or homemade taco seasoning)
  • 10 ounce can mild diced tomatoes and green chilies with juice
  • 4 ounce can diced green chiles
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 15 ounce container salsa con queso
  • Street taco size flour tortillas
  • Optional garnish: shredded lettuce, sour cream, diced tomatoes, chopped cilantro

Instructions

  1. Place chicken breasts in a slow cooker or large pot.
  2. Sprinkle taco seasoning over the chicken and add diced tomatoes with green chilies, diced green chiles, salt, and pepper.
  3. Cook on low for 6-8 hours (or on high for 3-4 hours) until the chicken is fully cooked and tender.
  4. Shred the cooked chicken with two forks and stir in salsa con queso until well combined and creamy.
  5. Warm flour tortillas according to package instructions.
  6. Assemble tacos by spooning queso chicken onto tortillas and topping with desired garnishes such as shredded lettuce, sour cream, diced tomatoes, and chopped cilantro.
  7. Serve immediately and enjoy.

Notes

  • For extra flavor, use homemade taco seasoning with cumin, paprika, garlic powder, and chili powder.
  • Street taco size tortillas work best for authentic serving, but regular tortillas can be used as well.
  • Leftover chicken can be stored in the refrigerator for up to 3 days.
