- 1 tablespoon canola oil
- 4 Tex-Mex Flour Tortillas, divided
- 6 tablespoons jarred marinara sauce, divided
- 6 ounces pepper Jack cheese, shredded (about 1 1/2 cups), divided
- 1/2 cup thinly sliced linguiça or Spanish chorizo (about 2 ounces)
- Grated Parmesan cheese, dried oregano, and crushed red pepper, for serving
Instructions
- Heat the canola oil in a large skillet over medium heat.
- Place one tortilla in the skillet and spread 1 1/2 tablespoons of marinara sauce evenly on top.
- Sprinkle with 1 1/2 ounces of shredded pepper Jack cheese, followed by a few slices of linguiça or chorizo.
- Top with another tortilla, pressing down gently, and cook for 2-3 minutes, or until the bottom is golden brown.
- Carefully flip the quesadilla and cook the other side for another 2-3 minutes, until golden brown and the cheese has melted.
- Remove from the skillet and repeat with the remaining tortillas, sauce, cheese, and chorizo.
- Serve the quesadizzas warm, topped with grated Parmesan, dried oregano, and crushed red pepper to taste.
Notes
- Feel free to substitute mozzarella or any other cheese of your choice.
- If you prefer a milder option, omit the chorizo and opt for a veggie filling like bell peppers or mushrooms.
