Description

A classic Quebecois maple pudding featuring a tender butter cake baked over a rich maple syrup sauce that settles underneath, creating a warm, comforting dessert with deep caramel flavor.

Ingredients

Units Scale
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups pure maple syrup
  • 1 cup brown sugar
  • 1 cup water

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and lightly grease an 8 inch square baking dish.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in milk and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Spread the batter evenly into the prepared baking dish.
  6. In a saucepan over medium heat, combine maple syrup, brown sugar, and water. Bring to a gentle boil, stirring until sugar dissolves.
  7. Carefully pour the hot syrup mixture evenly over the batter without stirring.
  8. Bake for 35 to 40 minutes until the top is golden and set.
  9. Allow to cool slightly before serving to let the syrup thicken at the bottom.

Notes

  • Use pure maple syrup for authentic flavor.
  • Do not stir after pouring the syrup mixture over the batter.
  • Let the pudding rest for 10 minutes before serving.
  • Serve warm for best texture and flavor.
