  • 1/2 teaspoon Cumin Seeds
  • 1/2 teaspoon Fennel Seeds
  • 1/4 teaspoon Crushed Coriander Seeds
  • 1/2 teaspoon Red Chili Powder

  • 1/2 teaspoon Amchur Powder (Dry Mango Powder)
  • 1/2 teaspoon Garam Masala
  • 1/4 teaspoon Turmeric Powder
  • Salt to Taste
  • 1/2 cup Plain Flour (for sprinkling)
  • 1 tablespoon Flour (for flour water paste)
  • 3 tablespoon Water (for flour water paste)
  • 1/2 cup Cilantro Chutney
  • 1/2 cup Dates and Tamarind Chutney
  • 1 Medium Onion, Finely Chopped
  • 2 Tomatoes, Finely Chopped
  • 1/2 cup Chopped Cilantro
  • 1/2 cup Thin Sev

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Thaw puff pastry sheets according to package instructions.
  2. In a pan, heat oil and add cumin seeds, fennel seeds, and crushed coriander seeds.
  3. Add boiled and mashed potatoes and green peas to the pan. Mix well.
  4. Add red chili powder, coriander-cumin powder, amchur powder, garam masala, turmeric, and salt. Cook for 5-6 minutes until everything is well combined. Let it cool.
  5. Roll out the thawed puff pastry sheets on a floured surface. Cut into squares or rectangles depending on desired samosa shape.
  6. Place a spoonful of the potato filling in the center of each piece. Fold and seal edges with flour-water paste.
  7. Place the filled pastries on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden brown and puffed up.
  9. Once slightly cooled, break open or cut the pastries and arrange on a serving plate.
  10. Top with cilantro chutney, tamarind chutney, chopped onions, tomatoes, cilantro, and a generous sprinkle of sev.
  11. Serve immediately for best taste and texture.

Notes

  • Make the samosa masala ahead of time to save on prep.
  • Customize the toppings with yogurt, pomegranate seeds, or chopped green chilies.
  • Use an air fryer instead of the oven for a quicker bake time.
  • Serve immediately after assembling to keep the puff pastry crisp.
