- 2 Boxes Frozen Store Bought Puff Pastry (each box contains 2 pastry sheets)
- 5 Large Boiled Potatoes
- 3/4 cup Green Peas (Fresh or Frozen)
- 3 teaspoon Oil
- 1/2 teaspoon Cumin Seeds
- 1/2 teaspoon Fennel Seeds
- 1/4 teaspoon Crushed Coriander Seeds
- 1/2 teaspoon Red Chili Powder
- 1/2 teaspoon Coriander-Cumin Powder
- 1/2 teaspoon Amchur Powder (Dry Mango Powder)
- 1/2 teaspoon Garam Masala
- 1/4 teaspoon Turmeric Powder
- Salt to Taste
- 1/2 cup Plain Flour (for sprinkling)
- 1 tablespoon Flour (for flour water paste)
- 3 tablespoon Water (for flour water paste)
- 1/2 cup Cilantro Chutney
- 1/2 cup Dates and Tamarind Chutney
- 1 Medium Onion, Finely Chopped
- 2 Tomatoes, Finely Chopped
- 1/2 cup Chopped Cilantro
- 1/2 cup Thin Sev
Instructions
- Preheat oven to 400ยฐF (200ยฐC). Thaw puff pastry sheets according to package instructions.
- In a pan, heat oil and add cumin seeds, fennel seeds, and crushed coriander seeds.
- Add boiled and mashed potatoes and green peas to the pan. Mix well.
- Add red chili powder, coriander-cumin powder, amchur powder, garam masala, turmeric, and salt. Cook for 5-6 minutes until everything is well combined. Let it cool.
- Roll out the thawed puff pastry sheets on a floured surface. Cut into squares or rectangles depending on desired samosa shape.
- Place a spoonful of the potato filling in the center of each piece. Fold and seal edges with flour-water paste.
- Place the filled pastries on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and puffed up.
- Once slightly cooled, break open or cut the pastries and arrange on a serving plate.
- Top with cilantro chutney, tamarind chutney, chopped onions, tomatoes, cilantro, and a generous sprinkle of sev.
- Serve immediately for best taste and texture.

- Make the samosa masala ahead of time to save on prep.
- Customize the toppings with yogurt, pomegranate seeds, or chopped green chilies.
- Use an air fryer instead of the oven for a quicker bake time.
- Serve immediately after assembling to keep the puff pastry crisp.
