- 8 large eggs
- 1 cup 2% cottage cheese
- 1/2 cup grated sharp cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon hot sauce
- 1/4 cup chopped chives
- Cooking spray
- Silicone muffin pan or muffin liners
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a silicone muffin pan with cooking spray or line a regular muffin tin with cupcake liners.
- Blend the mixture: In a blender, combine eggs, cottage cheese, cheddar cheese, salt, pepper, onion powder, garlic powder, and hot sauce. Blend until smooth.
- Fill the muffin cups: Pour the egg mixture evenly into the prepared muffin cups. Sprinkle each with chopped chives.
- Bake: Bake for 20–22 minutes or until set. The egg bites should be firm but tender.
- Cool & serve: Let them cool slightly before removing from the pan. Enjoy warm or store for later!
