Description

These Protein-Packed Egg Bites are made with cottage cheese and cheddar, making them a high-protein, low-carb breakfast option. They’re easy to meal prep, customizable, and perfect for busy mornings!


Ingredients

  • 1 cup 2% cottage cheese
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 tablespoon hot sauce
  • 1/4 cup chopped chives
  • Cooking spray
  • Silicone muffin pan or muffin liners

Instructions

  • Preheat oven to 350°F (175°C). Lightly spray a silicone muffin pan with cooking spray or line a regular muffin tin with cupcake liners.
  • Blend the mixture: In a blender, combine eggs, cottage cheese, cheddar cheese, salt, pepper, onion powder, garlic powder, and hot sauce. Blend until smooth.
  • Fill the muffin cups: Pour the egg mixture evenly into the prepared muffin cups. Sprinkle each with chopped chives.
  • Bake: Bake for 20–22 minutes or until set. The egg bites should be firm but tender.
  • Cool & serve: Let them cool slightly before removing from the pan. Enjoy warm or store for later!
