  • 1 cup cooked chicken, shredded
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon salt

  • 1/2 teaspoon cumin (optional)
  • 1/4 teaspoon chili flakes (optional)
  • 1/2 cup shredded cheese (mozzarella or cheddar)
  • 1 tablespoon fresh parsley, chopped
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • Oil for frying or baking

Instructions

  • In a bowl, combine mashed potatoes with salt, pepper, and paprika. Mix well.
  • In a separate pan, sauté chopped onion and garlic until soft. Add shredded chicken, cumin, and chili flakes. Cook for 2-3 minutes. Remove from heat.
  • Stir in shredded cheese and parsley into the chicken mixture. Let it cool slightly.
  • Take a portion of mashed potatoes, flatten it in your hand, and place some chicken filling in the center. Shape into a roll.
  • Dip the roll into the beaten egg, then coat with breadcrumbs.
  • Heat oil in a pan and fry the rolls until golden brown, about 3-4 minutes per side. Alternatively, bake at 375°F (190°C) for 20-25 minutes until crispy.
