For the Onion Rings:
- 3-4 Tbsp olive oil
- 3/4 cup all-purpose flour, divided
- 6 oz plain 2% Greek yogurt
- 2 large eggs
- 1-2 Tbsp buttermilk
- 1 (8 oz) bag Lay’s Kettle Cooked Chips, crushed
- 2 large sweet onions, sliced into 1/4 to 1/2-inch thick rounds
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, place half of the flour. In another bowl, whisk together Greek yogurt, eggs, and buttermilk until smooth. In a third bowl, combine the crushed potato chips with the remaining flour.
- Dredge onion slices first in flour, then dip into the yogurt-egg mixture, and finally coat with the potato chip mixture.
- Arrange coated onion rings on the prepared baking sheet in a single layer. Drizzle lightly with olive oil.
- Bake for 15–20 minutes, flipping halfway, until golden and crispy.
- Serve warm with your favorite dipping sauce.
