Description

A bold and crunchy twist on the classic Caesar salad featuring kale, crispy pepperoni, toasted garlic breadcrumbs, creamy Caesar dressing, and plenty of Parmesan. A pizza-inspired salad that hits every craving.


Ingredients

  • 1 bunch kale, destemmed and chopped
  • 1/2 cup Caesar dressing
  • 1/2 cup pepperoni slices, chopped or whole
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 cup breadcrumbs
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, massage kale with a pinch of salt and a drizzle of olive oil until slightly softened.
  3. Toss breadcrumbs with garlic and 1 tablespoon olive oil. Spread breadcrumbs and pepperoni on baking sheet. Bake for 6–8 minutes until crispy.
  4. Add Caesar dressing to kale and toss until evenly coated.
  5. Top with toasted breadcrumbs, crispy pepperoni, and freshly grated Parmesan.
  6. Season with black pepper and toss gently again. Taste and adjust salt or dressing if needed.
  7. Serve immediately with extra Parmesan on top.

  • Massage kale for a tender texture and better flavor.
  • Use homemade breadcrumbs for richer flavor and texture.
  • Swap kale with romaine or arugula if preferred.
  • Add grilled chicken or roasted veggies to make it a full meal.
