- 1 bunch kale, destemmed and chopped
- 1/2 cup Caesar dressing
- 1/2 cup pepperoni slices, chopped or whole
- 1/2 cup Parmesan cheese, freshly grated
- 1/2 cup breadcrumbs
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, massage kale with a pinch of salt and a drizzle of olive oil until slightly softened.
- Toss breadcrumbs with garlic and 1 tablespoon olive oil. Spread breadcrumbs and pepperoni on baking sheet. Bake for 6–8 minutes until crispy.
- Add Caesar dressing to kale and toss until evenly coated.
- Top with toasted breadcrumbs, crispy pepperoni, and freshly grated Parmesan.
- Season with black pepper and toss gently again. Taste and adjust salt or dressing if needed.
- Serve immediately with extra Parmesan on top.

- Use homemade breadcrumbs for richer flavor and texture.
- Swap kale with romaine or arugula if preferred.
