Ingredients

For the Brioche:

  • 4 cups (500g) all-purpose flour
  • 1/2 cup (100g) sugar
  • 3 eggs
  • 7 tbsp (100g) softened butter
  • 1 cup (250ml) warm milk
  • 1 packet (7g) dry yeast
  • 1 pinch of salt

For the Pistachio Filling:

  • 1/2 cup (100g) pistachio paste
  • 1/2 cup (50g) powdered sugar
  • 1/2 cup (50g) almond flour
  • 1 tbsp milk
  • 1 egg yolk (for brushing)

For Decoration (Optional):

  • Crushed pistachios
  • Pearl sugar
  • Melted white chocolate

Instructions

Step 1: Prepare the Brioche Dough

  1. In a bowl, mix the yeast with warm milk and let it rest for 5 minutes.
  2. In a large mixing bowl, combine flour, sugar, and salt.
  3. Add the eggs, softened butter, and milk-yeast mixture.
  4. Knead for about 10 minutes until the dough is smooth and elastic.
  5. Cover with a clean cloth and let it rise in a warm place for 1.5 hours or until doubled in size.

Step 2: Prepare the Pistachio Filling

  1. In a bowl, mix the pistachio paste, powdered sugar, almond flour, and milk until smooth.

Step 3: Shape the Crown

  1. Punch down the dough and roll it into a rectangle on a floured surface.
  2. Spread the pistachio filling evenly over the dough.
  3. Roll the dough into a log from the long side.
  4. Slice the log in half lengthwise, then twist the two halves together.
  5. Shape into a ring and pinch the ends together.
  6. Place on a parchment-lined baking sheet and let rise for another 30 minutes.

Step 4: Baking

  1. Preheat the oven to 350ยฐF (180ยฐC).
  2. Brush the brioche with egg yolk for a golden finish.
  3. Bake for 25-30 minutes until golden brown.

Step 5: Decoration & Serving

  1. Let it cool slightly, then sprinkle with crushed pistachios and pearl sugar.
  2. (Optional) Drizzle with melted white chocolate for extra indulgence.
  3. Serve warm or at room temperature and enjoy!
