- 1/2 cup mayonnaise
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon salt

- 4 ounces diced jarred pimentos (drained)
- 2 cups sharp cheddar cheese (freshly shredded)
- Fresh chives (chopped, to garnish)
Instructions
- In a large bowl, stir together the softened cream cheese and mayonnaise until smooth. For a fluffier dip, use a hand mixer to blend the mayo, cream cheese, and seasonings.
- Stir in the paprika, salt, and black pepper.
- Add the diced pimentos and freshly shredded cheddar cheese. Fold everything together gently to combine.
- Cover and refrigerate for at least 30 minutes or up to two hours to allow the flavors to meld.
- Garnish with fresh chives before serving.
