Description

These Pimento Cheese Stuffed Mini Peppers are a deliciously creamy, cheesy appetizer with a perfect balance of flavor and spice. Filled with a rich pimento cheese mixture and topped with melted cheddar, these bite-sized treats make for the ultimate snack or party dish. Ingredients

  • 1 (8-oz.) pkg. cream cheese, softened

  • 1 (4-oz.) jar pimentos, drained

  • 1/2 tsp. garlic powder

  • 1/2 tsp. kosher salt

  • Pinch of cayenne pepper

  • 1 3/4 cups shredded cheddar, divided

  • 1 (1-lb.) bag mini sweet peppers (about 24)

Instructions

Prepare the Filling

  1. Preheat oven to 400ยฐF and arrange a rack in the center.

  2. In a large bowl, mix together cream cheese, pimentos, garlic powder, kosher salt, cayenne pepper, and 1 cup of shredded cheddar until smooth.

Stuff the Peppers

  1. Cut mini peppers in half lengthwise and remove seeds and ribs.

  2. Spoon about 1 tablespoon of the pimento cheese mixture into each pepper half. Arrange them cut side up on a baking sheet.

  3. Top each stuffed pepper with the remaining 3/4 cup of shredded cheddar.

Bake the Peppers

  1. Bake the stuffed peppers in the oven for 10 to 12 minutes, or until the cheese is melted and bubbly.

  2. Let cool for 10 minutes before serving.

Serve

  1. Top with sliced chives and serve as a delicious appetizer or snack.


Notes

  • You can prepare the pimento cheese filling in advance and refrigerate it until youโ€™re ready to stuff the peppers.
