1/2 tsp. kosher salt

Pinch of cayenne pepper

1 3/4 cups shredded cheddar, divided

1 (1-lb.) bag mini sweet peppers (about 24)

Instructions
Prepare the Filling

Preheat oven to 400ยฐF and arrange a rack in the center.

In a large bowl, mix together cream cheese, pimentos, garlic powder, kosher salt, cayenne pepper, and 1 cup of shredded cheddar until smooth.
Stuff the Peppers

Cut mini peppers in half lengthwise and remove seeds and ribs.

Spoon about 1 tablespoon of the pimento cheese mixture into each pepper half. Arrange them cut side up on a baking sheet.

Top each stuffed pepper with the remaining 3/4 cup of shredded cheddar.
Bake the Peppers
