Description

Ingredients

  • 2 cups dill pickles (finely chopped)
  • 1 cup fresh tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup cilantro (chopped)
  • 1 tablespoon lime juice
  • 1 tablespoon pickle juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • Optional: 1 jalapeño (finely chopped for extra spice)

Instructions

  • Chop the ingredients: Finely chop the dill pickles, tomatoes, red onion, and cilantro. If using, also chop the jalapeño for an added kick.
  • Combine: In a mixing bowl, combine all the ingredients—dill pickles, tomatoes, onion, cilantro, lime juice, pickle juice, garlic powder, cumin, and salt and pepper.
  • Taste and adjust: Taste and adjust seasoning if needed. You can add more lime juice or pickle juice for extra tang, or more salt and pepper for flavor.
  • Serve: Serve immediately with tortilla chips, tacos, or grilled meats. Alternatively, chill for 30 minutes to allow the flavors to meld.

Notes

  • For a smoother salsa, you can pulse the ingredients in a food processor, but be careful not to overprocess it.
  • If you prefer a spicier version, add more jalapeño or chili flakes.
  • This salsa is best served fresh but can be stored in an airtight container in the fridge for up to 2 days.
