- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 1.5 pounds lean ground beef
- 1/2 cup assorted bell peppers, finely chopped
- 1/2 cup green peppers, finely chopped
- Salt, to taste
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 cloves garlic, minced
- 1 pound phyllo dough, thawed
- 1 cup melted butter
- 1/3 cup milk
- 1 large egg
- Pinch black pepper
- Pinch salt
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Sauté onions until translucent.
- Add ground beef, bell peppers, green peppers, salt, black pepper, paprika, and garlic. Cook until beef is browned and vegetables are tender. Remove from heat and let cool slightly.
- Lay out one sheet of phyllo dough and brush lightly with melted butter. Place another sheet on top and brush with butter again.
- Place a portion of the beef mixture along one edge of the phyllo sheet. Roll tightly, tucking in the edges to seal the filling.
- Repeat with remaining phyllo and filling.
- Whisk together milk, egg, pinch of salt, and pinch of black pepper. Brush over the phyllo rolls for a golden finish.
- Bake for 25–30 minutes, or until phyllo is crisp and golden brown.
- Allow to cool slightly before serving.
Notes
- Ensure phyllo dough stays covered with a damp towel to prevent drying out while assembling.
- You can add a pinch of cinnamon or nutmeg to the beef filling for extra warmth and depth.
- These rolls can be made ahead and baked just before serving for convenience.
