This Pesto Grilled Shrimp is a fresh and flavorful dish perfect for summer grilling! Juicy shrimp are marinated in a vibrant basil pesto, then grilled to perfection in just minutes. Serve as an appetizer, over pasta, or in a salad for a delicious and easy meal!

- 1/2 cup fresh basil, packed
- 1 small garlic clove
- 1 tbsp pine nuts, toasted
- 2 tbsp Parmigiano Reggiano (Parmesan), grated
- 2 tbsp olive oil
- 1 tbsp lemon juice (about 1/4 lemon)
- Salt and pepper to taste
- 1 lb shrimp, peeled and deveined
Instructions
- In a food processor or blender, pulse together basil, garlic, pine nuts, Parmesan, olive oil, lemon juice, salt, and pepper until smooth.
- Place shrimp in a bowl and toss with the pesto marinade. Cover and refrigerate for at least 20 minutes, up to overnight.
- Preheat a grill to medium-high heat. Thread the shrimp onto skewers.
- Grill shrimp for 2-3 minutes per side until opaque and cooked through.
- Serve immediately and enjoy!
Notes
- For extra flavor, add a pinch of red pepper flakes to the pesto.
- Serve over pasta, rice, or in a salad for a complete meal.
- No grill? Cook the shrimp in a skillet over medium-high heat for the same delicious results!
