- 1 pound Peruvian grilled chicken, chopped
- 6 cups lettuce, sliced
- 1 red bell pepper, sliced or diced
- 1 yellow bell pepper, sliced or diced
- 1 cup cucumber, sliced or diced
- 1 cup tomatoes, sliced or diced
- 1/2 cup olives, sliced
- 1/2 cup red onion, sliced or diced
- 1/2 cup aji verde (Peruvian green sauce)
Instructions
- Start by grilling the chicken. Season it with Peruvian spices and cook until golden and cooked through. Let the chicken rest before chopping into bite-sized pieces.
- In a large salad bowl, combine the lettuce, red and yellow bell peppers, cucumber, tomatoes, olives, and red onion.
- Top the salad with the grilled chicken pieces.
- Drizzle the aji verde sauce over the salad and toss gently to coat everything evenly.
- Serve immediately, and enjoy this refreshing, tangy, and spicy salad.
Notes
- If you can’t find aji verde, you can substitute with a cilantro-based dressing or make a quick homemade version using cilantro, jalapeño, garlic, lime juice, and mayonnaise.
