Description

Perfectly roasted carrots with a golden-brown exterior and tender, sweet insideโ€”all achieved in just 30 minutes at high heat! Simply seasoned with salt, pepper, and garlic, this easy side dish is delicious on its own but also versatile for extra flavor twists like Parmesan, Moroccan spices, or a tangy tahini drizzle.


Ingredients

  • 2 lb (1 kg) carrots, peeled and trimmed
  • 2 tbsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 garlic cloves, minced or grated (optional)

  • Fresh parsley, chopped

Instructions

1. Preheat & Prep:

  • Preheat oven to 430ยฐF (220ยฐC) (or 400ยฐF/200ยฐC fan-forced).
  • Slice carrots on the diagonal into 2-inch (5cm) pieces. Cut thicker ones in half lengthwise.

2. Roast the Carrots:

  • Place carrots on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  • Spread carrots out in a single layer and roast for 20 minutes.

3. Add Garlic & Roast Again:

  • Remove from oven, push carrots to one side, and add garlic (and any extra flavors). Toss to coat.
  • Roast for another 10 minutes.

4. Serve:

  • Toss carrots again in the flavorful juices.
  • Garnish with parsley and serve immediately!

Notes

  • Carrots: Fresh is best! If using frozen, expect less browning.
  • Garlic Tip: Add garlic halfway through roasting to avoid burning.
  • Flavor Variations:
    • Parmesan: Toss with ยผ cup grated Parmesan before baking.
    • Moroccan: Toss with ยพ tsp paprika, ยพ tsp cumin, ยผ tsp cinnamon, โ…› tsp turmeric, ยผ tsp ginger powder before baking.
    • Tahini Sauce: Whisk together ยผ cup tahini, 2.5 tbsp water, 1.5 tsp honey, 1 tbsp lemon juice, ยฝ garlic clove (minced), ยผ tsp salt & pepper. Drizzle over carrots or serve on the side.
    • Lemon Yogurt Sauce: Mix 1 cup yogurt, 1 garlic clove (minced), 2 tbsp olive oil, 1โ€“2 tbsp lemon juice, ยผ tsp salt & pepper.
