Ingredients
Scale
- 1 x 500g pack white bread mix
- 1 teaspoon dried mixed herbs
- 1 tablespoon olive oil
- Flour, for dusting
- 150g tomato and herb pasta sauce
- 150g ready-grated mozzarella
- 40g Parmesan, finely grated
- 200g drained roasted peppers from a jar, chopped
- 1 x 100g pack sliced pepperoni
Instructions
- Prepare the bread mix according to the package instructions, adding the dried herbs and olive oil to the dough. Knead until smooth, then leave to rise until doubled in size (about 1 hour).
- Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
- On a lightly floured surface, roll out the dough into a large rectangle about 1 cm thick.
- Spread the tomato and herb pasta sauce evenly over the dough.
- Sprinkle the mozzarella and Parmesan cheese evenly on top.
- Add the chopped roasted peppers and pepperoni slices across the surface.
- Roll the dough up tightly from the long edge to form a log, then slice into 2–3 cm thick rounds.
- Place the scrolls cut-side up on the prepared baking tray, leaving space between each one.
- Bake for 15–20 minutes, or until golden brown and the cheese is melted and bubbly.
- Allow to cool slightly before serving warm.
Notes
- These scrolls can be made ahead and frozen; simply reheat before serving.
- Try swapping pepperoni for cooked ham, mushrooms, or olives for a different flavor.
- Serve with extra tomato sauce for dipping.
