- 1 ripe but firm pear (Bosc or Anjou), thinly sliced
- 1/2 cup (60g) crumbled Gorgonzola cheese
- 1/2 cup (60g) chopped walnuts
- 2 cups (60g) arugula
- 2 tbsp olive oil
- 1 tbsp balsamic glaze (or balsamic vinegar)

Instructions

Preheat the oven
- Preheat oven to 425ยฐF (220ยฐC).

Prepare the flatbread
- Roll out the flatbread or pizza dough on a baking sheet or pizza stone.
- Drizzle 1 tbsp olive oil over the dough and spread evenly.

Add toppings
- Arrange pear slices evenly over the dough.
- Sprinkle Gorgonzola cheese and chopped walnuts on top.

- Bake for 12-15 minutes or until the crust is golden and crisp and the cheese is melted.

Add arugula
- In a small bowl, toss the arugula with the remaining 1 tbsp olive oil, salt, and pepper.
- Once the flatbread is out of the oven, top it with fresh arugula.
