Description

These flaky pear puff pastry tarts combine buttery, crisp layers of puff pastry with juicy, caramelized pears and a touch of almond flour for the perfect balance of sweetness and texture. Simple to make yet elegant enough for fine dining, this easy dessert is perfect for any occasion!


Ingredients

  • 2 packs puff pastry (store-bought or homemade)
  • 6 pears, halved and thinly sliced
  • 6 tbsp almond flour (1/2 tbsp per tart)
  • 6 tbsp brown sugar
  • 1 egg (for egg wash)
  • Splash of milk (for egg wash)

Instructions

Prepare the Pastry & Pears

  1. Thaw puff pastry (if frozen) but keep it cold.
  2. Preheat oven to 190°C (370°F).
  3. Slice pears lengthwise, remove cores, and cut into thin slices. Pat dry with a paper towel.

Assemble the Tarts

  1. Unfold one puff pastry sheet and cut into 6 rectangles. Repeat with the second sheet for a total of 12.
  2. Place ½ tbsp almond flour in the center of each rectangle.
  3. Arrange pear slices over the almond flour and sprinkle with brown sugar.
  4. Whisk egg and milk together and brush around the pastry edges (not the pears).

Bake the Tarts

  1. If the puff pastry feels warm, chill in the fridge for a few minutes.
  2. Bake at 190°C (370°F) for 45 minutes. Cover after 15 minutes to prevent excessive browning.
  3. Let cool for 3 minutes on the baking tray, then transfer to a cooling rack.

Storage & Serving

  • Best served fresh for maximum crispness.
  • Store at room temperature in an airtight container for 2-3 days.
