Description

This Pear Clafoutis is a delicate French dessert featuring ripe pears baked in a tender, custard-like batter. Lightly sweet and fragrant with vanilla and lemon zest, it’s perfect for breakfast, brunch, or a simple dessert.

Ingredients

Units Scale
  • 2 eggs
  • 3 tablespoons sugar
  • 2/3 cup whole milk
  • 1/3 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1 pinch salt
  • 2 small-medium ripe pears, peeled, cored, and sliced
  • 1/2 tablespoon butter, to grease skillet

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch skillet or baking dish with butter.
  2. In a bowl, whisk together eggs and sugar until pale and frothy.
  3. Add milk, flour, vanilla extract, lemon zest, and salt. Whisk until smooth and well combined.
  4. Arrange pear slices evenly in the prepared skillet.
  5. Pour the batter over the pears, ensuring they are mostly covered.
  6. Bake for 35–40 minutes, or until the clafoutis is set and lightly golden on top.
  7. Allow to cool slightly before serving. Optionally, dust with powdered sugar before serving.

Notes

  • Use just-ripe pears for sweetness and a tender texture.
  • The clafoutis can be served warm or at room temperature.
  • Swap pears with other fruits like apples, plums, or cherries for variety.
