Ingredients

  • 3 medium peaches, pitted and chopped
  • 1 cup granulated sugar (adjust to taste)
  • 1 cup freshly squeezed lemon juice (about 6-8 lemons)
  • 4 cups water (divided)
  • Ice cubes, for serving
  • Garnish: lemon slices, peach slices, or fresh mint

Instructions

  1. In a medium saucepan, combine the chopped peaches, sugar, and 1 cup of water. Bring to a simmer over medium heat, stirring occasionally, until the peaches are soft and the sugar dissolves (about 5-7 minutes).
  2. Remove from heat and let the mixture cool slightly. Blend it until smooth using an immersion blender or countertop blender. Strain the puree through a fine mesh sieve to remove any solids.
  3. In a large pitcher, combine the peach puree, lemon juice, and the remaining 3 cups of water. Stir well to combine.
  4. Taste and adjust sweetness or acidity by adding more sugar or lemon juice if needed.
