- 3 cups peeled and sliced ripe peaches, about 4 medium peaches
- 2 cups full fat plain kefir
- 1/3 cup honey
- 1 teaspoon pure vanilla extract
- 1 tablespoon freshly squeezed lemon juice
- 1/8 teaspoon fine salt
Instructions
- Freeze the ice cream maker bowl according to manufacturer instructions.
- Add peaches, kefir, honey, vanilla extract, lemon juice, and salt to a blender and blend until completely smooth.
- Pour the mixture into a mixing bowl, cover, and chill in the refrigerator for at least 1 hour.
- Pour the chilled mixture into the ice cream maker.
- Churn for 20 to 25 minutes until it reaches a soft serve consistency. If not using a machine, pour into a freezer safe container and freeze, stirring every 30 minutes for 2 to 3 hours.
- Transfer to a sealed container and freeze for an additional 2 hours for a firmer texture.
- Let sit at room temperature for 5 minutes before scooping, then serve and enjoy.
Notes
- Use very ripe peaches for the best natural sweetness and flavor.
- Chill the mixture thoroughly before churning to help prevent ice crystals.
- Store in an airtight container in the freezer for up to 2 weeks.
