- Peach Filling:

- Biscuit Layer:
- 2 cups all-purpose flour (250g)
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup very cold unsalted butter
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons honey
- Biscuit Topping:
- 1 large egg, beaten
- 1 tablespoon milk
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon
Instructions
- Prepare the Peach Filling:
In a large bowl, mix the brown sugar and cornstarch until it resembles the consistency of sand. Add the remaining peach filling ingredients and stir until well combined. Transfer the mixture to a greased 9ร13-inch baking dish. Bake uncovered for 10 minutes at 350ยฐF. Remove and set aside. - Prepare the Biscuit Layer:
In a separate bowl, combine the flour, sugar, baking powder, baking soda, and salt. Add the cold butter, cut into cubes, and work it in with a pastry cutter until the mixture forms coarse crumbs. Stir in the chilled sour cream mixture and honey until just combined. The dough should be crumbly. - Assemble the Cobbler:
Take small handfuls of the biscuit dough and arrange it over the peach filling, covering most of it. The top should look rustic. - Prepare the Biscuit Topping:
Whisk the egg and milk together and brush it over the biscuit dough. Sprinkle the top with sugar and cinnamon. - Bake the Cobbler:
