- 4 cups mixed greens or arugula
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey

Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the vinaigrette.
- In a large salad bowl, combine the shredded chicken, sliced peaches, cherry tomatoes, cucumber, red onion, and basil leaves.
- Add the mixed greens and gently toss everything together.
