Description

Pea Bruschetta is a fresh and flavorful appetizer featuring sweet peas tossed with aromatic herbs and spices, served on toasted baguette slices. It’s vibrant, easy to make, and perfect for parties or light snacks.

  • 16 ounce bag of frozen peas
  • 1 small white onion, finely chopped
  • 3 tablespoons olive oil + 1 tablespoon olive oil, divided
  • 1/4 cup seasoned rice vinegar
  • 1 tablespoon dried parsley
  • 1 tablespoon dried dill
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons coarse salt, or to taste
  • 1 teaspoon black pepper, or to taste
  • 2 teaspoons white sugar
  • 1 loaf French baguette
  • Thinly sliced green onions or chives (optional)

Instructions

  1. Cook the peas according to package instructions and drain well.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat and sauté the chopped onion until translucent.
  3. In a mixing bowl, combine cooked peas, sautéed onions, remaining olive oil, rice vinegar, dried parsley, dried dill, garlic powder, onion powder, salt, black pepper, and sugar. Mix well.
  4. Slice the French baguette into 1/2-inch thick pieces. Brush with olive oil and toast in a 350°F (175°C) oven until golden.
  5. Top each toasted baguette slice with the pea mixture.
  6. Garnish with green onions or chives if desired and serve immediately.

Notes

  • For extra freshness, use fresh peas instead of frozen.
  • Adjust seasoning to taste, adding more vinegar or salt if needed.
  • Can be made ahead and stored in the fridge for up to 1 day; assemble just before serving to keep bread crisp.
