Ingredients

1 cup warm milk (see notes)

1 (1/4 oz or 10g) instant yeast packet

1 tablespoon sugar

2 cups flour

7 ounces Parmesan cheese, grated

Salt and freshly ground pepper, to taste

1 teaspoon dry oregano

1 tablespoon fresh thyme leaves

1 egg

1/2 cup butter, melted
Instructions

Activate the Yeast:
In a medium bowl, combine the warm milk, sugar, and yeast. Cover with a kitchen towel and let it rest for 5 minutes. -
Prepare the Dry Ingredients:
In the meantime, combine the flour, Parmesan cheese, salt, pepper, oregano, and thyme in a large bowl. Reserve. -
Combine Wet and Dry Ingredients:
Once the yeast is bubbly and smelling like beer, add the egg and melted butter to the yeast mixture and whisk until well combined. Pour the liquid mixture into the dry ingredients and stir until smooth. Do not overmix. -
Prepare the Muffin Tin:
Spray a muffin tin with cooking spray or grease with oil. Pour the batter into the muffin tray, filling each cup about halfway. Optionally, sprinkle with extra Parmesan and herbs. -
Let the Dough Rise:
Cover the tray and let the dough rise for 1 hour. -
Bake:
Preheat oven to 350ยฐF (175ยฐC). Once the dough has risen, bake the muffins for 25 to 30 minutes, or until golden brown. Remove from the oven and let them cool slightly before transferring them to a cooling rack.
