Description

Ingredients

  • 3 tablespoons butter
  • 1/2 medium onion finely chopped
  • 1 rib of celery finely chopped, about 1/2 cup
  • 1/4 cup rice
  • 1 teaspoon salt
  • 2 1/2 cups chicken broth
  • 2 1/2 cups cream or 1/2 and 1/2
  • 1 pint whole shucked oysters, rinsed and drained

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and celery, cooking for about 5-7 minutes until softened and fragrant.
  2. Stir in the rice and salt, then add the chicken broth. Bring the mixture to a simmer and cook for 10-12 minutes, until the rice is tender.
  3. Reduce the heat to low and add the cream (or ½ and ½). Stir well to combine.
  4. Carefully add the rinsed oysters and cook for an additional 3-4 minutes until they are just heated through. Be cautious not to overcook the oysters.
