Scale
- 3 tablespoons butter
- 1/2 medium onion finely chopped
- 1 rib of celery finely chopped, about 1/2 cup
- 1/4 cup rice
- 1 teaspoon salt
- 2 1/2 cups chicken broth
- 2 1/2 cups cream or 1/2 and 1/2
- 1 pint whole shucked oysters, rinsed and drained
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and celery, cooking for about 5-7 minutes until softened and fragrant.
- Stir in the rice and salt, then add the chicken broth. Bring the mixture to a simmer and cook for 10-12 minutes, until the rice is tender.
- Reduce the heat to low and add the cream (or ½ and ½). Stir well to combine.
- Carefully add the rinsed oysters and cook for an additional 3-4 minutes until they are just heated through. Be cautious not to overcook the oysters.
- Serve the stew hot with a sprinkle of fresh herbs or crackers, if desired. Enjoy this comforting dish!
Notes
- For a richer flavor, you can substitute the cream with half-and-half, or use a combination of cream and milk.
- Adding a splash of sherry or white wine at the end can enhance the depth of flavor.
- This stew is best enjoyed fresh, but it can be stored in the fridge for a couple of days. Reheat gently to avoid overcooking the oysters.
