Description

Oven Roasted Yukon Gold Potatoes with Onions is a comforting side dish made with tender Yukon potatoes, sweet Vidalia onions, garlic, and thyme, all roasted to perfection in flavorful chicken broth.


Ingredients

  • 1 Vidalia onion, thinly sliced
  • 6 Yukon potatoes (about 2 pounds), peeled
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • Salt and pepper, to taste
  • 2 1/2 cups chicken broth

Instructions

  1. Preheat oven to 375ºF.
  2. Thinly slice the peeled Yukon potatoes and Vidalia onion.
  3. In a large bowl, toss the potatoes and onions with olive oil, minced garlic, fresh thyme, salt, and pepper.
  4. Layer the mixture evenly in a baking dish.
  5. Pour chicken broth over the potatoes and onions.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove foil and continue baking for an additional 15–20 minutes until the potatoes are tender and lightly browned on top.

Notes

  • Use a mandoline for even potato slices to ensure uniform cooking.
  • For a vegetarian version, substitute vegetable broth for chicken broth.
