- 1 Vidalia onion, thinly sliced
- 6 Yukon potatoes (about 2 pounds), peeled

- 2 cloves garlic, minced

- 2 1/2 cups chicken broth
Instructions
- Preheat oven to 375ºF.
- Thinly slice the peeled Yukon potatoes and Vidalia onion.
- In a large bowl, toss the potatoes and onions with olive oil, minced garlic, fresh thyme, salt, and pepper.
- Layer the mixture evenly in a baking dish.
- Pour chicken broth over the potatoes and onions.
- Cover the dish with foil and bake for 45 minutes.
- Remove foil and continue baking for an additional 15–20 minutes until the potatoes are tender and lightly browned on top.
Notes
- Use a mandoline for even potato slices to ensure uniform cooking.
- For a vegetarian version, substitute vegetable broth for chicken broth.
