- 1 lb tomatoes, sliced
- 3 tbsp olive oil, plus more for drizzling
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp oregano
- 6 oz feta cheese
- 3 tbsp yogurt
- 1 tbsp olive oil (for feta)
- Lemon zest (optional)
- A splash of water (if needed)
- 1 crusty baguette, sliced and toasted
Instructions
- Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
- In a bowl, toss sliced tomatoes with olive oil, salt, black pepper, and oregano.
- Arrange tomatoes cut-side up on the baking sheet. Roast for 2–3 hours until shriveled but not dry.
- In a food processor, blend feta, yogurt, and 1 tbsp olive oil until smooth. Add lemon zest and water if needed to adjust texture.
- Slice and toast baguette until golden and crisp.
- Spread whipped feta on each baguette slice and top with oven-dried tomatoes.
- Drizzle with olive oil and serve warm or at room temperature.

- Store oven-dried tomatoes in olive oil in the fridge for up to 1 week.
- Whipped feta can be made 3–4 days in advance.
- Use block feta for the best texture and flavor.
