Description

Crispy oven-dried tomatoes paired with creamy whipped feta spread on slices of toasted baguette. This Mediterranean-inspired appetizer is bursting with savory, tangy, and herby flavors—perfect for entertaining or snacking.


Ingredients

  • 1 lb tomatoes, sliced
  • 3 tbsp olive oil, plus more for drizzling
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp oregano
  • 6 oz feta cheese
  • 3 tbsp yogurt
  • 1 tbsp olive oil (for feta)
  • Lemon zest (optional)
  • A splash of water (if needed)
  • 1 crusty baguette, sliced and toasted


Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss sliced tomatoes with olive oil, salt, black pepper, and oregano.
  3. Arrange tomatoes cut-side up on the baking sheet. Roast for 2–3 hours until shriveled but not dry.
  4. In a food processor, blend feta, yogurt, and 1 tbsp olive oil until smooth. Add lemon zest and water if needed to adjust texture.
  5. Slice and toast baguette until golden and crisp.
  6. Spread whipped feta on each baguette slice and top with oven-dried tomatoes.
  7. Drizzle with olive oil and serve warm or at room temperature.

Notes

  • Store oven-dried tomatoes in olive oil in the fridge for up to 1 week.
  • Whipped feta can be made 3–4 days in advance.
  • Use block feta for the best texture and flavor.
