- 8 tbsp butter, melted
- 1 1/3 cups chocolate graham cracker crumbs (about 1 1/2 sleeves finely ground)
- 24 oz cream cheese, room temperature
- 3/4 cup granulated sugar
- 2 tbsp cocoa powder
- 2 tbsp cornstarch
- 1/2 tsp vanilla extract
- 1 tbsp orange blossom water
- 2 tbsp grated orange rind
- 3/4 cup melted semi-sweet chocolate, slightly cooled
- 3 eggs
- 2 tbsp heavy cream
- 1/4 cup heavy cream (for ganache)
- 1 1/4 cups semi-sweet chocolate chips (for ganache)
Instructions
- Preheat oven to 325°F and lightly grease a 9-inch springform pan.
- Combine melted butter and chocolate graham cracker crumbs. Press into the bottom of the pan and bake for 10 minutes. Cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth. Add cocoa powder, cornstarch, vanilla, orange blossom water, and orange rind. Mix until combined.
- Blend in melted chocolate. Add eggs one at a time, mixing just until combined. Stir in heavy cream.
- Pour filling over the crust. Place pan in a larger baking dish with 1 inch of hot water. Bake for 55–60 minutes until the center is just set.
- Turn off oven, crack door open, and let the cheesecake cool inside for 1 hour. Remove and cool completely before refrigerating for 6 hours or overnight.
- For ganache, heat 1/4 cup cream until steaming, pour over chocolate chips, let sit for 2 minutes, then stir smooth. Spread over chilled cheesecake and garnish with fresh orange zest.
