- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup honey
- 2 large eggs
- 1 tablespoon fresh orange zest
- 1 tablespoon freshly grated ginger
- 1/4 cup orange juice
- 1/4 cup honey
- 2 tablespoons orange juice
- 1 teaspoon orange zest for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease a mini bundt or muffin pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, beat butter, sugar, and honey until creamy. Add eggs one at a time, then mix in orange zest, grated ginger, and orange juice.
- Gradually fold dry ingredients into the wet mixture until just combined.
- Spoon batter into prepared pans, filling each about ¾ full.
- Bake for 18–20 minutes or until golden and a toothpick comes out clean.
- In a small saucepan, warm honey and orange juice to make the glaze. Brush over warm cakes and let soak in.
- Top with extra orange zest and serve slightly warm.

- Don’t overmix the batter to keep the texture light.
- Use fresh orange juice for the best flavor.
- Warm the honey glaze slightly before brushing for easier absorption.
