Ingredients
Units
Scale
- 1 lb breakfast sausage
- 25 oz frozen egg noodle ravioli (frozen or fresh)
- 20 oz diced tomatoes with garlic
- 1/2 cup heavy cream
- 1 cup spinach or arugula
Instructions
- In a large pan, brown sausage on medium-high heat and break it up into crumbles, about 8 minutes.
- Toss in ravioli and stir to coat with sausage grease. Be careful not to let ravioli stick to the bottom of the pan.
- Slowly stir in diced tomatoes and cook for about 4 minutes, allowing the liquid to reduce.
- Add in heavy cream, reduce heat to medium-low, and stir well. Let the sauce thicken.
- Add spinach or arugula and stir until wilted.
- Check the doneness of the pasta. If itโs soft and springy, itโs done! If still slightly frozen, add a little water to prevent overcooking the sauce and toss until pasta is fully cooked.
- Plate and enjoy!
Notes
- This dish is very flexible! You can use any kind of ravioli, whether cheese or meat-filled, for a different flavor twist.
- Feel free to swap spinach for arugula for a slightly peppery flavor.
- If youโd like extra creamy sauce, add a little more heavy cream to taste.
