Description

A hearty and flavorful one-pan lasagna featuring Italian sausage and roasted red peppers, layered with creamy ricotta and spinach, all baked to perfection for a comforting meal.


Ingredients

  • 4 uncooked Italian sausages (about 400g)
  • 1 jar (300ml) roasted red peppers, drained and pureed
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 can (796ml) crushed tomatoes
  • 3/4 teaspoon salt
  • Pinch of red pepper flakes
  • Dry lasagna noodles, regular or instant
  • 200g grated cheese (e.g., Le Bergeron Classique)
  • 300g lactose-free ricotta cheese
  • 70g baby spinach
  • 8 to 10 fresh basil leaves
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Remove casings from sausages and crumble the meat.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add sausage meat and cook until browned.
  4. Add minced garlic and cook for 1 minute.
  5. Stir in crushed tomatoes, roasted red pepper puree, 3/4 teaspoon salt, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. In a food processor, blend ricotta cheese, half of the grated cheese, baby spinach, basil leaves, 1/2 teaspoon salt, and black pepper until creamy.
  7. Spread 1/4 of the sauce in the bottom of the skillet. Layer with lasagna noodles, half of the ricotta-spinach mixture, and another 1/4 of the sauce. Repeat the layers, ending with sauce and remaining grated cheese on top.
  8. Cover with foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes until cheese is golden and bubbly.
  9. Let the lasagna rest for 10 minutes before serving.

Notes

  • This dish can be prepared a day ahead and baked just before serving.
  • For a vegetarian version, substitute sausage with plant-based alternatives.
  • Pair with a green salad and a glass of fruity red wine for a complete meal.
