A hearty and flavorful one-pan lasagna featuring Italian sausage and roasted red peppers, layered with creamy ricotta and spinach, all baked to perfection for a comforting meal.

- 4 uncooked Italian sausages (about 400g)
- 1 jar (300ml) roasted red peppers, drained and pureed
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 can (796ml) crushed tomatoes
- 3/4 teaspoon salt
- Pinch of red pepper flakes
- Dry lasagna noodles, regular or instant
- 200g grated cheese (e.g., Le Bergeron Classique)
- 300g lactose-free ricotta cheese
- 70g baby spinach
- 8 to 10 fresh basil leaves
- 1/2 teaspoon salt
- Freshly ground black pepper to taste
Instructions
- Preheat the oven to 190°C (375°F).
- Remove casings from sausages and crumble the meat.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add sausage meat and cook until browned.
- Add minced garlic and cook for 1 minute.
- Stir in crushed tomatoes, roasted red pepper puree, 3/4 teaspoon salt, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a food processor, blend ricotta cheese, half of the grated cheese, baby spinach, basil leaves, 1/2 teaspoon salt, and black pepper until creamy.
- Spread 1/4 of the sauce in the bottom of the skillet. Layer with lasagna noodles, half of the ricotta-spinach mixture, and another 1/4 of the sauce. Repeat the layers, ending with sauce and remaining grated cheese on top.
- Cover with foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes until cheese is golden and bubbly.
- Let the lasagna rest for 10 minutes before serving.
Notes
- This dish can be prepared a day ahead and baked just before serving.
- For a vegetarian version, substitute sausage with plant-based alternatives.
- Pair with a green salad and a glass of fruity red wine for a complete meal.
