- 12 ounces gnocchi
- 1 pound boneless skinless chicken breast, diced
- 2 cups fresh spinach
- 1 medium carrot, julienned or diced
- 2 cloves garlic, minced
- 1 small onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced chicken until lightly browned. Remove and set aside.
- Add onion, garlic, and carrot to the pot and sauté until fragrant and softened.
- Pour in chicken broth and bring to a simmer. Add gnocchi and the cooked chicken.
- Simmer 5–7 minutes until the gnocchi is tender.
- Reduce heat and stir in heavy cream and Italian seasoning. Add spinach and cook until just wilted.
- Adjust seasoning with salt and black pepper to taste.
- Ladle soup into bowls and serve warm with breadsticks or crusty bread.
Notes
- Fresh gnocchi gives the best texture, but frozen can be used with slight adjustment to cooking time.
- Add spinach last to maintain vibrant color and fresh flavor.
- Reheat gently to prevent curdling of the cream.
