Description

Olive Garden Style Chicken & Gnocchi Soup is a creamy and comforting homemade version of the classic restaurant favorite. It features tender chicken, pillowy gnocchi, fresh spinach, and carrots in a rich, flavorful broth that’s perfect for cozy meals.


Ingredients

  • 12 ounces gnocchi
  • 1 pound boneless skinless chicken breast, diced
  • 2 cups fresh spinach
  • 1 medium carrot, julienned or diced
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced chicken until lightly browned. Remove and set aside.
  2. Add onion, garlic, and carrot to the pot and sauté until fragrant and softened.
  3. Pour in chicken broth and bring to a simmer. Add gnocchi and the cooked chicken.
  4. Simmer 5–7 minutes until the gnocchi is tender.
  5. Reduce heat and stir in heavy cream and Italian seasoning. Add spinach and cook until just wilted.
  6. Adjust seasoning with salt and black pepper to taste.
  7. Ladle soup into bowls and serve warm with breadsticks or crusty bread.

Notes

  • Fresh gnocchi gives the best texture, but frozen can be used with slight adjustment to cooking time.
  • Add spinach last to maintain vibrant color and fresh flavor.
  • Reheat gently to prevent curdling of the cream.
