Scale
- 3/4 cup sugar
- 1/4 cup flour
- 1/4 teaspoon salt
- 3 cups milk
- 3 eggs
- 2 teaspoons vanilla extract
- 1 box vanilla wafers (about 8 oz)
- 4 bananas, sliced
Instructions
- In a saucepan, mix the sugar, flour, and salt.
- Whisk in the milk and cook over medium heat. Continue to cook until the mixture thickens and bubbles. Reduce heat to low and cook for an additional 2 minutes.
- Remove from heat. In a small bowl, whisk together the eggs. Gradually add a small amount of the hot mixture to the eggs and whisk well. Add the egg mixture back into the hot mixture and return to heat. Heat until a gentle boil starts and cook for about 2 minutes.
- Add in the vanilla extract and remove from heat. Allow to cool for about 15 minutes, stirring occasionally.
- In an ungreased 8-inch square pan, layer approximately 25 vanilla wafers on the bottom, followed by half of the banana slices. Pour half of the pudding mixture on top.
- Repeat the layers once more, ending with the pudding layer on top.
- Cover the dish with plastic wrap and place it in the refrigerator. Allow to chill for at least 4 hours, preferably overnight.
- Before serving, crush the remaining wafers and sprinkle them over the top of the pudding. Serve cold.
