- 1 cup red lentils, rinsed and drained
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 2 tbsp olive oil
- Salt and pepper to taste
- Garnish: fresh parsley, a drizzle of coconut milk, or toasted bread
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté until softened, about 5 minutes.
- Stir in minced garlic, cinnamon, nutmeg, and ginger, cooking for another minute until fragrant.
- Add the red lentils and vegetable broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.
- Blend the soup using an immersion blender (or carefully transfer to a countertop blender) until smooth.
- Stir in the coconut milk and adjust seasoning with salt and pepper. Heat gently without boiling.
- Serve hot, garnished with fresh parsley and a drizzle of coconut milk.
Notes
- This soup can also be served with crusty bread or croutons for added texture.
- Add a pinch of cayenne pepper for a hint of heat.
- For a drinkable consistency, thin the soup with more broth and serve in mugs.
