Scale
- 2-3 tablespoons olive oil
- 1 1/2 pounds boneless, skinless chicken breasts, butterflied
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Kosher salt and ground black pepper, to taste
- 1 head Romaine lettuce (approx. 6 ounces), chopped
- 1 avocado, diced
- 1/2 red onion, thinly sliced
- 1/2 cup shaved Parmesan cheese
- Spritz fresh lemon juice
- Heaping 1/2 cup Caesar dressing
- 4 large burrito-sized flour tortillas
- Optional: 1 1/3 cup finely grated Parmesan cheese, divided
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the butterflied chicken breasts with garlic powder, onion powder, salt, and pepper.
- Pan-sear the chicken breasts for 4–5 minutes per side, until golden and cooked through.
- If using, sprinkle the chicken with some of the grated Parmesan in the last minute of cooking to create a crispy crust.
- Remove chicken from heat and let rest for a few minutes, then slice thinly.
- In a large bowl, combine chopped Romaine, avocado, red onion, shaved Parmesan, a spritz of lemon juice, salt, pepper, and Caesar dressing. Toss gently.
- Warm the tortillas briefly in a dry skillet or microwave.
- Place a portion of the salad mixture onto each tortilla, top with sliced chicken, and optionally sprinkle with extra grated Parmesan.
- Roll up tightly, slice in half if desired, and serve immediately.
Notes
- Use Greek Yogurt Caesar Dressing for a lighter version.
- Add crispy bacon bits for extra flavor.
- Wraps can be made ahead and stored in the fridge, but add dressing just before serving to avoid sogginess.
