- 1/2 cup butter, room temperature
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 whole egg + 2 egg yolks, separated
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup mini marshmallows
- 1 cup semi-sweet chocolate chips
- 1 cup packed light brown sugar
Instructions
- Preheat oven to 350°F (175°C) and grease or line a baking pan with parchment paper.
- In a large bowl, cream together butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
- Beat in the whole egg and egg yolks one at a time until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet ingredients and mix until combined.
- Fold in mini marshmallows and chocolate chips gently.
- Spread batter evenly into the prepared baking pan.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean and edges are lightly golden.
- Allow to cool completely in the pan before cutting into bars.

- Ensure marshmallows are evenly distributed to prevent sinking.
- Bars can be stored in an airtight container at room temperature for up to 3 days.
- For extra gooeyness, slightly underbake and let the bars set as they cool.
