- 2 pounds ground beef
- 1 small onion, chopped
- 1 small green bell pepper, diced
- 1 medium tomato, diced
- 1 large egg
- 2 tablespoons garlic, minced
- 1 cup seasoned bread crumbs
- 5 slices Muenster cheese
- 1/4 cup shredded cheddar cheese
- 1 package Idahoan mashed potatoes, prepared according to package instructions
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking pan.
- In a large bowl, combine ground beef, chopped onion, diced bell pepper, diced tomato, egg, garlic, and seasoned bread crumbs. Mix until well combined.
- Press half of the meat mixture into the prepared baking pan to form the base layer.
- Layer the Muenster cheese slices evenly over the meat base.
- Add the remaining meat mixture on top, pressing gently to form an even layer.
- Spread prepared mashed potatoes over the top of the meatloaf cake.
- Sprinkle shredded cheddar cheese over the mashed potatoes.
- Bake for 45–55 minutes, or until the meat is fully cooked and the cheese is melted and golden.
- Let the meatloaf cake rest for 5–10 minutes before slicing and serving.
Notes
- Use seasoned bread crumbs for extra flavor, or add your own spices if preferred.
- You can swap Muenster cheese for another melting cheese like mozzarella or provolone.
- Garnish with fresh parsley for a pop of color and added flavor.
