Description

Mom’s Meatloaf Cake is a comforting, savory dish that layers seasoned ground beef with vegetables, cheeses, and creamy mashed potatoes, creating a hearty and delicious family favorite.


Ingredients

  • 2 pounds ground beef
  • 1 small onion, chopped
  • 1 small green bell pepper, diced
  • 1 medium tomato, diced
  • 1 large egg
  • 2 tablespoons garlic, minced
  • 1 cup seasoned bread crumbs
  • 5 slices Muenster cheese
  • 1/4 cup shredded cheddar cheese
  • 1 package Idahoan mashed potatoes, prepared according to package instructions

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking pan.
  2. In a large bowl, combine ground beef, chopped onion, diced bell pepper, diced tomato, egg, garlic, and seasoned bread crumbs. Mix until well combined.
  3. Press half of the meat mixture into the prepared baking pan to form the base layer.
  4. Layer the Muenster cheese slices evenly over the meat base.
  5. Add the remaining meat mixture on top, pressing gently to form an even layer.
  6. Spread prepared mashed potatoes over the top of the meatloaf cake.
  7. Sprinkle shredded cheddar cheese over the mashed potatoes.
  8. Bake for 45–55 minutes, or until the meat is fully cooked and the cheese is melted and golden.
  9. Let the meatloaf cake rest for 5–10 minutes before slicing and serving.

Notes

  • Use seasoned bread crumbs for extra flavor, or add your own spices if preferred.
  • You can swap Muenster cheese for another melting cheese like mozzarella or provolone.
  • Garnish with fresh parsley for a pop of color and added flavor.
