Description

Ingredients

Berry Filling:

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

Cobbler Topping:

  • 1 cup (125g) all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 3/4 cup (150g) granulated sugar

  • 3/4 cup (180ml) buttermilk (or milk)

  • 1/4 cup (60g) melted butter

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • Zest of 1 orange

  • 2 tbsp almond flakes (for topping)

For Serving:

  • Vanilla ice cream, whipped cream, or mascarpone cream


Instructions

  • Preheat Oven:

    • Preheat oven to 375ยฐF (190ยฐC).

    • Grease a 9ร—13-inch baking dish or a 9-inch pie dish.

  • Prepare Berry Filling:

    • In a bowl, combine berries, sugar, cornstarch, lemon juice, and vanilla.

    • Toss gently, then transfer to the prepared baking dish.

  • Make the Cobbler Topping:

    • In a separate bowl, whisk together flour, sugar, baking powder, and salt.

    • Add buttermilk, melted butter, vanilla extract, lemon zest, and orange zest.

    • Mix until just combined (do not overmix).

  • Assemble & Bake:

    • Drop spoonfuls of cobbler topping over the berry filling, leaving some gaps.

    • Sprinkle with almond flakes for crunch.

    • Bake for 40-45 minutes, until the topping is golden brown and the berry filling is bubbly.

    • If browning too quickly, loosely cover with aluminum foil halfway through baking.
