Description
Tender and buttery black cod glazed with a savory sweet miso marinade, baked until perfectly caramelized and finished with a fresh squeeze of lime.

- 4 black cod fillets, about 6 ounces each
- 1/3 cup white miso paste
- 2 tablespoons mirin
- 2 tablespoons granulated sugar
- 1 tablespoon soy sauce
- 1 tablespoon neutral oil
- 1 whole fresh lime, cut into wedges
- 1/4 teaspoon salt
Instructions
- Preheat oven to 400°F and lightly brush a baking dish with neutral oil.
- In a small bowl, whisk together white miso paste, mirin, granulated sugar, and soy sauce until smooth.
- Pat the black cod fillets dry and place them in the prepared baking dish.
- Spoon or brush the miso mixture evenly over the top of each fillet.
- Let the fish marinate for at least 30 minutes if time allows.
- Bake for 12 to 15 minutes, depending on thickness, until the fish flakes easily with a fork and the glaze is lightly caramelized.
- Remove from oven and let rest for 3 to 5 minutes.
- Squeeze fresh lime juice over the top just before serving.
Notes
- Do not overbake to keep the fish moist and tender.
- You can marinate the fish up to 24 hours in advance for deeper flavor.
- For extra caramelization, broil briefly at the end while watching closely.
