Description

Tender and buttery black cod glazed with a savory sweet miso marinade, baked until perfectly caramelized and finished with a fresh squeeze of lime.


Ingredients

  • 4 black cod fillets, about 6 ounces each
  • 1/3 cup white miso paste
  • 2 tablespoons mirin
  • 2 tablespoons granulated sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon neutral oil
  • 1 whole fresh lime, cut into wedges
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F and lightly brush a baking dish with neutral oil.
  2. In a small bowl, whisk together white miso paste, mirin, granulated sugar, and soy sauce until smooth.
  3. Pat the black cod fillets dry and place them in the prepared baking dish.
  4. Spoon or brush the miso mixture evenly over the top of each fillet.
  5. Let the fish marinate for at least 30 minutes if time allows.
  6. Bake for 12 to 15 minutes, depending on thickness, until the fish flakes easily with a fork and the glaze is lightly caramelized.
  7. Remove from oven and let rest for 3 to 5 minutes.
  8. Squeeze fresh lime juice over the top just before serving.

Notes

  • Do not overbake to keep the fish moist and tender.
  • You can marinate the fish up to 24 hours in advance for deeper flavor.
  • For extra caramelization, broil briefly at the end while watching closely.
