- 8 ounces bittersweet chocolate, finely chopped
- 1/4 cup unsweetened Dutch process cocoa powder
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 cup (1 stick) unsalted butter, at room temperature (for buttercream)
- 2 ounces cream cheese, at room temperature
- 2 tablespoons green crรจme de menthe liquor
- 1 teaspoon peppermint extract
- Pinch kosher salt
- 2 cups powdered sugar
- 6 ounces dark chocolate, finely chopped (for ganache)
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Line an 8ร8-inch baking pan with parchment paper and lightly grease with cooking spray or butter.
- Melt butter and chocolate in a medium saucepan over low heat, stirring constantly. Remove from heat and whisk in cocoa powder, sugar, and vanilla. Let sit for 5 minutes.
- Whisk in eggs one at a time. Fold in flour and salt with a rubber spatula. Spread batter in prepared pan.
- Bake for 23 to 25 minutes, or until set. Cool completely in the pan.
- To make the buttercream, beat butter and cream cheese until smooth. Add crรจme de menthe, peppermint extract, and salt. Gradually beat in powdered sugar until smooth and fluffy.
- Spread buttercream over cooled brownies. Refrigerate for at least 30 minutes.
- For the ganache, heat cream until bubbling, then pour over chopped chocolate. Let sit 10 minutes, then stir until smooth. Cool for 10 minutes before using.
- Spread ganache over chilled buttercream. Refrigerate for at least 30 minutes before slicing and serving.
Notes
- For a non-alcoholic version, replace crรจme de menthe with mint extract and green food coloring.
- Chill between layers for clean slicing.
- Store leftovers in an airtight container in the fridge for up to 5 days.
