Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 8 ounces bittersweet chocolate, finely chopped
  • 1/4 cup unsweetened Dutch process cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature (for buttercream)
  • 2 ounces cream cheese, at room temperature
  • 2 tablespoons green crรจme de menthe liquor
  • 1 teaspoon peppermint extract
  • Pinch kosher salt
  • 2 cups powdered sugar
  • 6 ounces dark chocolate, finely chopped (for ganache)
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line an 8ร—8-inch baking pan with parchment paper and lightly grease with cooking spray or butter.
  2. Melt butter and chocolate in a medium saucepan over low heat, stirring constantly. Remove from heat and whisk in cocoa powder, sugar, and vanilla. Let sit for 5 minutes.
  3. Whisk in eggs one at a time. Fold in flour and salt with a rubber spatula. Spread batter in prepared pan.
  4. Bake for 23 to 25 minutes, or until set. Cool completely in the pan.
  5. To make the buttercream, beat butter and cream cheese until smooth. Add crรจme de menthe, peppermint extract, and salt. Gradually beat in powdered sugar until smooth and fluffy.
  6. Spread buttercream over cooled brownies. Refrigerate for at least 30 minutes.
  7. For the ganache, heat cream until bubbling, then pour over chopped chocolate. Let sit 10 minutes, then stir until smooth. Cool for 10 minutes before using.
  8. Spread ganache over chilled buttercream. Refrigerate for at least 30 minutes before slicing and serving.

Notes

  • For a non-alcoholic version, replace crรจme de menthe with mint extract and green food coloring.
  • Chill between layers for clean slicing.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
