For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, chilled and cubed
  • 2โ€“3 tablespoons ice-cold water
  • Pinch of salt

For the Filling:

  • 1/2 cup smoked salmon, chopped
  • 1/2 cup grated cheddar or Gruyรจre cheese
  • 4 medium eggs
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Chopped fresh dill, for garnish

Instructions

Prepare the Crust:

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease and lightly flour a mini muffin tin.
  2. In a bowl, mix the flour and salt. Add the cubed butter and blend gently until it forms coarse crumbs.
  3. Gradually add the ice-cold water, 1 tablespoon at a time, mixing until the dough comes together.
  4. Roll out the dough on a floured surface and cut into small circles to fit your mini muffin tin cups.
  5. Press the dough circles into the cups, forming mini crusts. Prick the bottoms with a fork to prevent puffing.
  6. Place the muffin tin in the fridge while preparing the filling.

Make the Filling & Bake:

  1. In a bowl, whisk together the eggs, cream, salt, and pepper until smooth.
  2. Add a small amount of chopped salmon and grated cheese into each mini crust.
  3. Pour the egg mixture over the filling, filling each crust almost to the top.
  4. Bake for 15-20 minutes, or until the quiches are set and slightly golden on top.
  5. Let cool for a few minutes, then carefully remove from the muffin tin.
  6. Garnish with fresh chopped dill before serving. Enjoy!

Notes

  • Swap smoked salmon for cooked crab, shrimp, or ham for a different flavor twist.
  • Make-ahead option: Prepare the quiches a day before and store in the fridge. Reheat at 300ยฐF for 5 minutes before serving.
  • If short on time, use store-bought pie crust instead of making it from scratch.
