Description

Mini Meatloaves are individual-sized, flavorful meatloaf portions made with ground beef, oats, and a blend of seasonings. Perfect for easy meals, they can be topped with ketchup or barbecue sauce for added flavor.


Ingredients

  • 1 onion, grated
  • 1 cup quick oats
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons soy sauce (gluten-free if necessary)
  • 2 lbs ground beef (preferably 80/20)
  • Ketchup or barbecue sauce for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine grated onion, quick oats, milk, eggs, salt, black pepper, and soy sauce. Mix well.
  3. Add ground beef to the mixture and gently combine until just mixed; avoid overmixing.
  4. Divide the mixture into 6-8 equal portions and shape each into a mini meatloaf on a lined baking sheet or in a mini loaf pan.
  5. If desired, spread ketchup or barbecue sauce over the tops of each mini meatloaf.
  6. Bake for 35-40 minutes, or until meatloaves are cooked through and internal temperature reaches 160°F (71°C).
  7. Let rest for a few minutes before serving.

  • Using quick oats helps bind the meatloaf while keeping it moist.
  • Gluten-free soy sauce is recommended for gluten-sensitive diets.
