- 2 eggs
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 teaspoons soy sauce (gluten-free if necessary)

Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine grated onion, quick oats, milk, eggs, salt, black pepper, and soy sauce. Mix well.
- Add ground beef to the mixture and gently combine until just mixed; avoid overmixing.
- Divide the mixture into 6-8 equal portions and shape each into a mini meatloaf on a lined baking sheet or in a mini loaf pan.
- If desired, spread ketchup or barbecue sauce over the tops of each mini meatloaf.
- Bake for 35-40 minutes, or until meatloaves are cooked through and internal temperature reaches 160°F (71°C).
- Let rest for a few minutes before serving.
Notes
- Using quick oats helps bind the meatloaf while keeping it moist.
- Gluten-free soy sauce is recommended for gluten-sensitive diets.
- Ketchup or barbecue sauce adds a sweet and tangy glaze but can be omitted for a simpler flavor.
- Mini meatloaves cook faster and make portion control easier.
- Can be stored in the refrigerator for up to 3 days or frozen for longer storage.
