Sourdough Starter
- 1 cup (240g) active sourdough starter
Wet Ingredients
- 1/2 cup (115g) brown butter
- 1/2 cup (120ml) milk
- 2 large eggs
Dry Ingredients
- 2 1/2 cups (300g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1/2 teaspoon salt
Filling
- 1/4 cup (50g) granulated sugar
- 1 tablespoon ground cinnamon
- 1/4 cup (55g) softened brown butter (for spreading)
Instructions
- Brown the Butter: Start by melting butter in a saucepan over medium heat, stirring frequently until it turns golden brown and develops a nutty aroma. Remove from heat and let it cool slightly.
- Prepare the Dough: In a mixing bowl, combine your sourdough starter, cooled brown butter, milk, and eggs. Mix well, then gradually add in the all-purpose flour, sugar, and salt until a soft dough forms.
- Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover it with a cloth, and let it rise until doubled in size, usually about 1-2 hours.
- Roll and Fill: Once the dough has risen, turn it out onto a floured surface. Roll it into a rectangle and spread a layer of softened brown butter, followed by a mixture of sugar and cinnamon. Roll the dough tightly into a log.
- Slice and Arrange: Cut the log into small pieces to create your mini cinnabundts. Arrange them in a greased baking dish, allowing some space for them to rise again. Cover and let them rest for about 30 minutes.
- Bake: Bake the mini cinnabundts in a preheated oven at 350ยฐF (175ยฐC) for about 20-25 minutes or until they are golden brown and cooked through. Allow them to cool slightly before serving.
Notes
- Ensure your sourdough starter is active and bubbly for the best rise.
- Keep your kitchen warm during the rising process to help the dough rise effectively.
- Generously spread the cinnamon-sugar mixture for a gooey center.
- Try different frostings or glazes to enhance the flavor even more.
- Check your cinnabundts a few minutes early to prevent over-baking.
