Instructions

Preheat Oven:
Preheat your oven to 350ยฐF (175ยฐC). -
Make the Filling:
In a mixing bowl, combine cinnamon, ginger, allspice, and cornstarch. Dice the apple and dates, then toss them in the spice mixture. Add sherry and stir to combine. Let rest. -
Prepare the Crust:
Roll out the pie crust to about 1/8-inch thickness. Use a 3-inch cookie cutter or glass to cut out 24 dough circles. Fit each round into a mini muffin pan. -
Fill the Pies:
Spoon about 1 tablespoon of the apple-date mixture into each dough cup. -
Top and Glaze:
Use leftover dough to make lattice tops or use cookie cutters for decorative shapes. Beat the egg and water to create an egg wash, then brush over each mini pie.
