Description

Ingredients

  • 1/4 tsp cinnamon

  • 1/8 tsp ginger

  • 1/8 tsp allspice

  • 1 tbsp cornstarch

  • 1 large apple (about 1 1/4 cup diced)

  • 1/4 cup dried dates

  • 1 tbsp sherry (*optional โ€“ see notes)

  • 1 pie crust (homemade or store-bought)

  • 1 egg

  • 1 tbsp water


Instructions

  • Preheat Oven:
    Preheat your oven to 350ยฐF (175ยฐC).

  • Make the Filling:
    In a mixing bowl, combine cinnamon, ginger, allspice, and cornstarch. Dice the apple and dates, then toss them in the spice mixture. Add sherry and stir to combine. Let rest.

  • Prepare the Crust:
    Roll out the pie crust to about 1/8-inch thickness. Use a 3-inch cookie cutter or glass to cut out 24 dough circles. Fit each round into a mini muffin pan.

  • Fill the Pies:
    Spoon about 1 tablespoon of the apple-date mixture into each dough cup.

  • Top and Glaze:
    Use leftover dough to make lattice tops or use cookie cutters for decorative shapes. Beat the egg and water to create an egg wash, then brush over each mini pie.

    Bake at 350ยฐF for 20โ€“25 minutes until golden and crisp. Let cool before serving.


Notes
