Units Scale

Main Ingredients

  • 1/2 lb ground beef
  • 1/2 lb ground lamb
  • 1 small onion, finely grated
  • 1/4 cup fresh parsley, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil (for brushing)
  • Metal or soaked wooden skewers (as needed)

Instructions

  1. Prepare the Meat Mixture: Combine the ground beef and lamb with the finely grated onion, minced garlic, and chopped parsley. Add ground cumin, coriander, cinnamon, salt, and pepper. Mix thoroughly by hand, taking care not to overwork the meat to maintain tenderness.
  2. Shape the Kebabs: Divide the meat mixture into equal portions. Mold each portion around a skewer, pressing gently so the meat adheres but remains slightly loose for even cooking. Aim for kebabs roughly finger-thick and several inches long.
  3. Preheat the Grill or Pan: Heat your grill to medium-high or prepare a stovetop grill pan by lightly coating it with olive oil. Proper preheating ensures a good sear and juicy interior.
  4. Grill the Kebabs: Place the skewers on the grill or pan, cooking for 4-5 minutes on each side until browned and cooked through to an internal temperature of 160ยฐF (71ยฐC). Flip only once or twice to maintain shape and maximize char.
  5. Rest and Serve: Remove the kebabs from heat and let them rest for a few minutes to allow juices to redistribute. Serve garnished with fresh herbs and alongside preferred sides.

Notes

  • Use a beef and lamb mix for optimal texture and flavor.
  • Finely grate the onion to add moisture without large pieces.
  • Keep the meat mixture chilled to prevent greasiness and maintain shape.
  • Handle the meat gently and avoid overmixing for tender kebabs.
  • Optional: Squeeze fresh lemon juice over cooked kebabs to brighten flavor.
