- 150 grams all purpose flour
- 100 ml water
- 600 ml milk (100 ml for dough, 500 ml for cream)
- 260 grams butter (80 grams for dough, 180 grams for cream)
- 6 large eggs (4 for dough, 2 for cream)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 150 grams sugar
Instructions
- Preheat oven to 350 degrees Fahrenheit and lightly grease an 8 inch round baking pan.
- In a saucepan, whisk together 500 ml milk, sugar, 100 grams flour, and 2 eggs. Cook over medium heat, whisking constantly, until thickened.
- Remove the cream from heat and stir in 180 grams butter until smooth. Allow to cool slightly.
- In another saucepan, combine 100 ml water, 100 ml milk, and 80 grams butter. Heat until butter melts.
- Remove from heat and stir in 150 grams flour, baking powder, and salt until smooth. Let cool slightly.
- Beat in 4 eggs one at a time until a smooth batter forms.
- Pour half of the dough batter into the prepared pan.
- Spread the cream filling evenly over the batter.
- Top with the remaining dough batter and gently smooth the surface.
- Bake for 45 to 50 minutes until golden and set.
- Allow to cool completely, then refrigerate for at least 2 hours before slicing and serving.

- Chill thoroughly for clean slices and best texture.
