  • 4 ciabatta rolls or whole-grain buns, split
  • 1-2 vine-ripened medium tomatoes, thinly sliced
  • 1/2 English cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • Tzatziki sauce (optional)
  • Marinated olives and walnuts (Zeytoon Parvardeh) (optional)

Instructions

  1. In a large bowl, combine ground turkey, shallot, mint, feta, garlic, Greek oregano, salt, and pepper. Mix gently until just combined; avoid overmixing.
  2. Form the mixture into 4 evenly sized patties.
  3. Heat a drizzle of olive oil in a skillet or grill pan over medium heat. Cook the patties for 5–6 minutes per side, or until fully cooked through and golden brown on the outside.
  4. Toast the ciabatta rolls or buns lightly on the skillet or grill.
  5. Assemble the burgers: place a turkey patty on each bun, top with tomato slices, cucumber, red onion, and optional tzatziki sauce.
  6. Serve with optional marinated olives and walnuts on the side for an extra Mediterranean touch.
