- 1 large shallot, finely chopped
- 1/2 cup fresh mint leaves, roughly chopped
- 2 ounces feta, crumbled (about 1/3 cup)
- 2 medium garlic cloves, minced
- 1 tablespoon Greek oregano
- Kosher salt and ground black pepper, to taste
- Extra virgin olive oil, for cooking
- 4 ciabatta rolls or whole-grain buns, split
- 1-2 vine-ripened medium tomatoes, thinly sliced
- 1/2 English cucumber, thinly sliced
- 1 small red onion, thinly sliced
- Tzatziki sauce (optional)
- Marinated olives and walnuts (Zeytoon Parvardeh) (optional)
Instructions
- In a large bowl, combine ground turkey, shallot, mint, feta, garlic, Greek oregano, salt, and pepper. Mix gently until just combined; avoid overmixing.
- Form the mixture into 4 evenly sized patties.
- Heat a drizzle of olive oil in a skillet or grill pan over medium heat. Cook the patties for 5–6 minutes per side, or until fully cooked through and golden brown on the outside.
- Toast the ciabatta rolls or buns lightly on the skillet or grill.
- Assemble the burgers: place a turkey patty on each bun, top with tomato slices, cucumber, red onion, and optional tzatziki sauce.
- Serve with optional marinated olives and walnuts on the side for an extra Mediterranean touch.
