Description

These Mediterranean Salmon Patties are crispy, flavorful, and packed with fresh spinach, red onion, garlic, and creamy feta cheese. A light and delicious meal option thatโ€™s perfect for any day of the week!


Ingredients

For the Patties:

  • 2 cans (6 oz each) salmon, drained and flaked

  • 1 cup fresh spinach, finely chopped (or 1/2 cup thawed, drained frozen spinach)

  • 1/4 cup red onion, finely chopped

  • 2 cloves garlic, minced

  • 1/3 cup feta cheese, crumbled


Instructions

  • Prepare the ingredients: In a large mixing bowl, combine the flaked salmon, chopped spinach, red onion, minced garlic, and crumbled feta cheese.

  • Form the patties: Use your hands to shape the mixture into small patties, about 2-3 inches in diameter, pressing gently to hold them together.

  • Cook the patties: Heat a non-stick skillet over medium heat and add a bit of olive oil. Once hot, add the salmon patties and cook for 3-4 minutes on each side until golden brown and crispy.

  • Serve: Remove the patties from the skillet and place them on a paper towel to drain excess oil. Serve warm with a side of tzatziki sauce or a fresh salad.


Notes

  • You can add more Mediterranean flavors like olives, sun-dried tomatoes, or fresh herbs (oregano or dill) to the patties for an extra twist.

  • For a lighter option, these patties can also be baked. Place them on a baking sheet and bake at 375ยฐF (190ยฐC) for 12-15 minutes, flipping halfway through.
